A generator of fats, oils and grease (F.O.G.) is any person (or organization) who causes, creates, generates or otherwise produces liquid waste, or a person who, for any reason, has liquid waste removed from his property by a transporter of liquid waste. Most generators fall into one of two categories:
- Automotive Service Establishment (ASE)
- Food Service Establishment (FSE)
Chapter 38, Article VII has specific requirements to ensure proper maintenance of grease/grit traps.
